Thyme (organic): 1 tsp, dried

Salt (organic): to taste

Directions:

1. Preparation:

Cut beef chuck into 1-inch cubes.

Dice onions, mince garlic, peel and slice carrots, slice celery, peel and cube potatoes, and chop tomatoes, green onions, and cilantro.

2. Sear the Beef:

Heat 2 tbsp of organic olive oil in a large pot over medium-high heat.

Add the beef cubes and sear on all sides until browned. This should take about 5-7 minutes.

Remove the beef from the pot and set aside.

3. Sauté Vegetables:

In the same pot, add diced onions and minced garlic. Sauté until the onions are translucent, about 3-4 minutes.

4. Add Liquids and Seasoning:

Return the beef to the pot.

Add 4 cups of organic beef broth, 5 tbsp of Granddaddy's Secret Sauce, 1 bay leaf, and 1 tsp of dried thyme.

Stir to combine.

5. Simmer the Stew:

Bring the stew to a boil, then reduce the heat to low.

Cover and let it simmer for 1 hour.

6. Add Remaining Vegetables:

After 1 hour, add sliced carrots, celery, and cubed potatoes.

Stir well, cover, and continue to simmer for another 30-40 minutes, or until the vegetables are tender.

7. Final Touches:

Once the vegetables are tender, add chopped tomatoes, green onions, and cilantro.

Season with salt and pepper to taste.

Simmer uncovered for an additional 10 minutes.

8. Serve:

Remove the bay leaf before serving.

Serve hot, garnished with extra cilantro if desired.

Total Cook Time:

Preparation: 15 minutes

Cooking: 1 hour 50 minutes

Total: Approximately 2 hours and 5 minutes

Enjoy this hearty, flavorful stew with a side of crusty bread! 😋
