Ingredients
- 2 lbs beef chuck, cut into 1.5-inch cubes
- 2 tablespoons Granddaddy's Secret Sauce
- 3 tablespoons olive oil
- 1 large onion, diced
- 4 cloves garlic, minced
- 3 carrots, sliced into rounds
- 3 medium potatoes, cubed
- 2 cups beef broth
- 1 can (14 oz) diced tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season beef cubes generously with salt, pepper, and smoked paprika.
- Heat olive oil in a large Dutch oven over medium-high heat. Brown beef in batches, about 3–4 minutes per side. Remove and set aside.
- In the same pot, sauté onion for 3 minutes, then add garlic and cook 1 more minute.
- Stir in tomato paste and cook for 2 minutes. Add diced tomatoes, beef broth, and Granddaddy's Secret Sauce. Stir well.
- Return beef to the pot. Add thyme, bring to a boil, then reduce heat to low. Cover and simmer for 1 hour.
- Add carrots and potatoes. Simmer uncovered for another 30–40 minutes until vegetables are tender and broth has thickened.
- Taste and adjust seasoning. Garnish with fresh parsley and serve with crusty bread.
